Don’t be surprised by the addition of cornstarch! Authentic Sicilian gelato is made without eggs or cream. The cornstarch is undetectable, but provides a smooth, creamy texture and delicious intense chocolate flavor. Serves 4-6
3 cups milk
3⁄ 4 cup sugar
2 tbsp. cornstarch
3⁄ 4 cup Zoe’s unsweetened cocoa
Bring 2 cups of the milk to a simmer in a medium saucepan over medium heat; remove from heat.
Combine remaining 1 cup milk, sugar, cornstarch, and cocoa in a bowl, then stir into the hot milk, and mix well. Return pan to heat and cook, stirring, u ntil the mixture thickens slightly, about 8 – 10 minutes.
Set aside to let cool, then cover with plastic and refrigerate overnight. Process mixture in an ice cream maker according to manufacturer's directions.
